Mother's Little Helper Blueberry Cornmeal Muffins with Satori Blueberries in Dark Chocolate

Mother's Little Helper Blueberry Cornmeal Muffins

Makes at least 12 muffins, 4 mg THC each. 


  • 1 ½ cups all purpose flour
  • ¾ cup cornmeal
  • ½ cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • zest of one lemon
  • 1 1/4 cups low-fat buttermilk
  • 2 large eggs, separated
  • 2 tablespoons unsalted butter, melted
  • 1 1/2 cups blueberries (about 1/2 pound), picked over and rinsed
  • 1 tin Satori Blueberries in Dark Chocolate


Step 1: Preheat oven to 400ºF degrees and grease a muffin tin. 

Step 2: In a medium bowl, whisk together your dry ingredients and add the zest of one lemon.

Step 3: In a small bowl, whisk together buttermilk, egg yolks, and butter. 

Step 4: Stir the wet mixture into your dry mixture. 

Step 5: In a bowl, whisk the egg whites until they begin to stiffen. Gently fold the egg whites and blueberries into the batter.

Step 6: Spoon batter into prepared muffin tin, filling each well about three-quarters full. Add one Satori bite per muffin, pressing in until just covered by the batter. 

Step 7: Bake for 15 minutes on middle rack or until tops are golden and a toothpick comes out clean. Let muffins cool slightly before removing. Cool and enjoy with salted butter or assemble for delivery to a mom in your life. 

Optional: Sprinkle with coarse sugar and press in one more Satori bite to top it all off.
